Cane molasses is a thick, dark syrup with a sweetness of 40% compared to regular sugar. It is rich in minerals, including potassium, which supports proper muscle tone and is a sodium antagonist, and non-heme iron (vegetable source), which is responsible for transporting oxygen to muscle tissue. Molasses is also rich in folic acid, niacin, pantothenic acid, choline, as well as phosphorus, calcium, iron and copper. Molasses has a glycemic index similar to regular sugar and can quickly raise blood sugar levels.
