Kombucha, also called tea fungus, is not actually a fungus. Instead, it is a symbiotic colony of bacteria and a special yeast culture belonging to the so-called SCOBY group, i.e. Symbiotic Cultures of Bacteria and Yeast . In Asian countries more than 2,000 years, a special drink has been prepared based on these bacteria, which is considered an elixir of longevity and has extraordinary health-promoting properties. In local medicine, kombucha is a remedy for all kinds of ailments. Relatively recently, the drink kombucha has also appeared in our country. So let's take a look at its properties.
What Kombucha looks like and how to make a drink from it
Kombucha looks like a round, slightly transparent cake with a strong gelatinous consistency. To make a drink from it, you need to add it to a container of sweet tea. Then the fermentation process begins. After about five (sometimes seven) days, the refreshing, sweet-sour, and slightly sparkling drink is ready to drink.
Properties of Kombucha
In China and Japan, where kombucha is most popular, it is considered a beverage that helps with almost all types of ailments. In fact, it is a healthier alternative to all carbonated, overly sweetened, and artificially colored fizzy drinks. One of the greatest benefits of kombucha is its probiotic nature. The kombucha drink helps regulate the proper level of intestinal flora, especially after a course of antibiotics, thus boosting immunity. Kombucha is also a source of many valuable ingredients such as:
- B vitamins,
- Vitamin C,
- Minerals: calcium, zinc, copper, magnesium , iron.
- organic acids: lactic acid, acetic acid and gluconic acid
The kombucha drink also contains sugar and caffeine, which is why it should not be given to children.
