Pistachio Mazurek with raspberries and white chocolate
Ingredients for shortcrust pastry:
- Wheat flour 300 g,
- a whole piece of cold butter,
- 3 egg yolks
- Powdered sugar 100 g
- Vanilla sugar .
Ingredients for the pistachio paste:
- Mascarpone cheese 250 g,
- a large handful of unsalted pistachios,
- sweet pistachio paste about 4 tablespoons,
- 3 tablespoons sweet pistachio cream ,
- a few cubes of white chocolate,
- 4 tablespoons of raspberry jam.
Pour the flour into a bowl and then add the butter, cut into small cubes—let it cool, straight from the refrigerator. Add powdered sugar and a little vanilla sugar for flavor. Gently mix the ingredients with your fingers or a flat spatula. Continue mixing until small, even lumps form. Now add the egg yolk and begin kneading the dough until it forms a smooth, even mass. Wrap it tightly in plastic wrap and let it chill in the refrigerator for at least 2 hours.
Once the dough has set, prepare the baking pan by lining it with parchment paper. Take about 3/4 of the dough and roll it out on a lightly floured surface. Carefully transfer the dough to the pan. Shape the remaining dough into thin rolls, twisting each in pairs to create decorative edges for the mazurka. Gently press them against the edge of the pan. Return the whole thing to the refrigerator for another 15 minutes to chill.
Meanwhile, preheat the oven to 180°C. Place the cooled dough in the oven and bake for about 20 minutes until golden brown. After baking, remove the mazurka and let it cool completely.
Spread the raspberry jam evenly over the baked and cooled crust, creating a sweet base for our next layer. Combine the mascarpone and pistachio paste in a bowl. Beat the ingredients for about 1 to 2 minutes, until the mixture increases in volume and becomes light and fluffy. Then spread the raspberry mixture evenly over the crust. Finally, sprinkle the dough with finely chopped pistachios for color and crunch. White chocolate shavings complement it.
Pistachio Lasagna
Ingredients for the béchamel sauce:
- Wheat flour 100 g
- Butter 100 g
- warm milk approx. 700 ml
- Pistachio sauce for béchamel:
- Pistachios 300 g,
- Olive oil 50 ml,
- warm boiled water 50 ml,
- Parmigiano cheese Reggiano 60 g,
- a few leaves of fresh basil,
- lemon peel
- Salt and pepper .
Additionally:
- 3 chopped mozzarella balls (approx. 400 g),
- smoked bacon approx. 600 g,
- Hard cheese cut into pieces 150 g,
- coarsely ground pistachios 120 g,

Lasagna noodles.
Melt the butter, add the flour, and whisk vigorously to blend the ingredients. Then pour in the warm milk, whisking continuously to avoid lumps. Once the béchamel base is ready, remove it from the heat.
Pour 300 ml of boiling water over the pistachios for 5 minutes to make them easier to shell. Strain and cool, then remove them from the shells. Transfer to a bowl, add the remaining ingredients, and mix until smooth. Stir this paste into the béchamel sauce, season with salt and pepper, and mix until smooth.
Then prepare the crispy bacon by slicing it and frying it over medium heat until golden brown. You can soften the lasagna noodles a bit by soaking them in boiling water for three minutes before arranging the layers. However, you can also use dry sheets without soaking.
In an ovenproof dish, first arrange the lasagna layers with the pistachio sauce, then place the pasta on top. Top the next layer of sauce with mozzarella, cheese, and bacon. Sprinkle the pistachios over the top and add another layer of pasta. Repeat the process, finishing with the pistachio sauce. Bake at 180°C for 20-25 minutes. Don't cut into the dish immediately after removing it from the oven; let the lasagna rest for a while to prevent the sauce from running out while cutting.
Pistachios in everyday cooking
Pistachios are used in less obvious but equally fascinating areas of cooking. Worth mentioning is their use in bread products and yeast cakes, where they add not only flavor but also an attractive appearance.
Another use for pistachios is in the preparation of vegan nut cheese. Thanks to their creamy consistency when blended, pistachios can be a base for plant-based cheeses, which surprise with their depth of flavor and texture. By adding spices, herbs, or even dried tomatoes, such a pistachio paste becomes a real culinary hit, perfect for spreading on fresh bread.
