Shiitake (Lentinula edodes (Berk .) Pegler), also known as edible cottage cheese or Japanese hardwoods, are edible mushrooms belonging to the Omphalotaceae family of the order Champignons. Originating in the Far East, these distant relatives of fungi are called the "elixir of life" in Japan due to their beneficial effects on the human body, including the lentinan compound that boosts the immune system. Edible cottage cheese is also a source of valuable B vitamins and minerals—manganese, zinc, phosphorus, potassium, calcium, iron, and magnesium—as well as fiber and vitamin D.
Adding shiitake mushrooms is a great way to enrich the flavor of a dish and add its unique aroma. They're perfect as an addition to soups, sauces, or as an ingredient in dumpling fillings.
