Fenugreek – Plant Properties
Fenugreek [lat. Trigonella foenum-graecum] is an annual plant from Asia, offering diverse medicinal and culinary uses. Other common names for fenugreek include fenegris, ibex, God's grass, and Greek hay. In its natural form, fenugreek is found in Asia and Eastern Europe. The herbal raw material derived from fenugreek includes its seeds, as they contain a high amount of polysaccharide mucilage – its content can even exceed 40%. Fenugreek leaves are less commonly harvested but are a frequently used raw material for eye diseases in Iran. Fenugreek is also a key ingredient in the world-famous curry blend.
Fenugreek in the kitchen
Although fenugreek is not a widely known spice in Poland, in other regions of the world it is a commonly used seasoning. Fenugreek has a slightly bitter and aromatic taste, resembling a mixture of lovage and burnt sugar. When roasted, it loses its bitterness and tastes more nutty. Fenugreek is an important ingredient in curry blends and other spice mixtures such as Bengali panch poron, Yemeni salatah, and Ethiopian berbere. Ground fenugreek is suitable for preparing Oriental and Indian dishes with vegetables, especially legumes. In North Africa and India, fenugreek is also used in bakeries as a bread additive.
Tips
Store fenugreek in an airtight, sealed package. Each of our spice packages has a drawstring closure that allows for easy closing and opening. With ground fenugreek in regular foil, it quickly loses its aroma after opening and can easily spill. To preserve as many vitamins as possible and release the full strength of the aroma, it is best to add fenugreek only at the end of the cooking process.
