Ceylon Cinnamon - the noble spice
Ceylon cinnamon [Latin: Cinnamomum verum] or true cinnamon is the most valuable among cinnamon varieties. Although other types of cinnamon are also available on the market, among which Cinnamomum cassia, Chinese cinnamon, (due to its low price) is the most widespread, Ceylon cinnamon stands out for its excellent quality. According to literature, cinnamon is probably one of the oldest spices known to humanity. Archaeologists confirm that it was already known in 4000 BC, and the first references to this spice were found in a Chinese herbal book from 2700 BC. Ceylon cinnamon originally comes from two exceptionally sunny islands - Ceylon and Madagascar. The spice is obtained from the bark of the Ceylon cinnamon tree - an evergreen tree that can grow up to 10 meters tall.

Thanks to its unique aroma, Ceylon cinnamon is an indispensable ingredient in many dishes. We are convinced that cinnamon is associated by people of all ages with the Christmas season, aromatic baked goods, and a cozy atmosphere at home. This is the main use of cinnamon - it enriches the flavor of many sweet desserts, cakes, or baked apples. Its characteristic sweet-spicy taste and aroma are due to the content of cinnamon oil, which is also widely used as such. It is worth noting that cinnamon (in various forms) is the only spice in the world obtained from the bark of the plant, which after pre-processing is dried in the sun and sold either as powder or in so-called cinnamon sticks. While in European cuisine cinnamon is associated with sweets, it is often used in Indian and Middle Eastern cuisine for savory and spicy dishes.
