Lamb's lettuce (Valerianella locusta (L.) lat. Em. Betcke), or edible lamb's lettuce, is an annual or biennial plant in the Valerianaceae family. Its main habitats are Europe, Asia Minor, and North Africa. It has very low climatic and soil requirements and is easy to cultivate. It grows wild in Poland and almost throughout the country.
Lamb's lettuce is used as a culinary vegetable or as a garnish. This unassuming plant with a neutral, slightly nutty flavor is a valuable source of vitamins and minerals. It contains, among other nutrients, magnesium, manganese, copper, potassium, selenium, calcium, iron, beta-carotene, B vitamins, and vitamin C – a true nutritional powerhouse with a low glycemic index and only about 22 kcal.
Lamb's lettuce pairs perfectly with salads, vegetable smoothies, and sandwiches. It's also a perfect garnish for meat, casseroles, and potatoes.
