Chicory (Cichorium L.) resembles Chinese cabbage and belongs to the Asteraceae family. It occurs naturally in the Mediterranean and in many other areas of Europe, as well as in western Asia and Ethiopia.
Chicory is not very popular in Poland, which is a shame because it is an exceptionally valuable and tasty vegetable. Due to the low calorie count, it is recommended to include it in the menu of people who are on a slimming diet. Chicory is rich in nutrients such as vitamins - group C, B - mineral salts - magnesium, potassium, iron, manganese, phosphorus and zinc - laccin and lacticrin.
Chicory has a positive effect on the digestive system, so adding it to food is always a good idea. It tastes great with salads and salads, it also goes well with nuts, cheese, meat and cold cuts.
Radicchio is a salad chicory, also called red chicory, with purple-white leaves, with the typical bitterness of chicory. This extraordinary variety with imaginative colors is an excellent source of B vitamins and vitamin K. Radicchio can be boiled, grilled, roasted and even baked. It is also suitable as a soup additive.
