Beet sourdough is made by fermenting beet juice, which converts the sugars found in beets into lactic acid. Known as beetroot sourdough, pickled borscht, or "strong drink," beetroot sourdough is an exceptionally nutrient-dense liquid that is purplish or purplish in color.
