Ricotta cheese is an unripened soft cheese made from goat's, cow's or sheep's milk. Originally made from the whey of stuffed cheeses, it looks like cottage cheese and has the lowest calorie count of any cheese. It originated in Italy but has spread all over the world and in the United States it even has its own whole milk variety. This unique product is characterized by a smooth texture, a sweet and sour taste and a high content of vitamin B12 , which is responsible for the production of energy in the cells and the maintenance of a normal metabolism. Ricotta is versatile in a kitchen reminiscent of Italian dishes. It goes well with both sweet and savory dishes.
