Vegetarian holidays – how do you prepare them?

If we don't eat meat and prefer a plant-based diet, we can adapt this tradition to enjoy delicious meals and a variety of dishes on the table on Christmas Eve. All you need to do is look for inspiring ideas and show a little creativity and willpower. Borscht
Borscht cooked in vegetable broth is a great solution that fits perfectly into the Christmas tradition and satisfies literally everyone—especially vegetarians. However, it's worth varying the flavor with onions previously fried in a pan. Another interesting solution is to add a sour accent, such as apple. This makes the borscht distinctive, aromatic, and original. We can serve it with dumplings or boiled beans, but it also makes a great warming drink.
Hummus
Hummus is a classic of vegetarian and vegan cuisine and therefore a must-have for Christmas dishes. It's not only a great and unusual side dish for lunch, but also a delicious breakfast and filling dinner. Another advantage of including hummus in your holiday menu is that you can season it in a variety of ways, creating different, sometimes extreme, flavors. For example, hummus can be enriched with garlic, sun-dried tomatoes , roasted peppers, or carrots. This allows us to experiment and choose the version that fully satisfies our taste buds.
Salads
A Christmas salad doesn't have to be high in calories, fat, and... mayonnaise or fish. Instead of tuna and lots of mayonnaise, we can also opt for a more plant-based version—all you need to do is add your favorite vegetables and fruits and prepare a sauce based on vegetable oil and your favorite spices. It doesn't have to be boring and is definitely more digestible than a classic salad with potatoes, eggs, or tuna. Let's add variety and beautiful colors to our plates!
