Chubrica (Czubrica) is a spice blend used in traditional Bulgarian cuisine, which is gaining increasing popularity even outside of its homeland. It is characterized not only by its unique, intense flavor, but also by its many health-promoting properties, making it not only a tasty culinary addition but also an ingredient that supports good body condition. Let's take a look at what green garlic is, its properties, and how it can be used in cooking to enrich the flavor of dishes and contribute to improving our health.
What is green chervil and what are its properties?
Savory consists of the dried and ground leaves of various herbs, primarily dried mountain savory, a close relative of the popular garden savory. This ingredient is responsible for the characteristic, expressive flavor with which this spice enriches various dishes. Depending on the region and individual recipe, the blend usually also contains marjoram, thyme, lovage, and other herbs. This combination gives the spice a complex and rich, delicate, and slightly spicy flavor.
Savory, the main ingredient in Czubrica , is known for its exceptionally intense and pleasant aroma, which is due to the presence of essential oils in its leaves. These oils are rich in various compounds that give the plant its characteristic flavor. They include, among others:
- flavonoids,
- Carotenoids,
- resins,
- castles,
- p-Cymene,
- Acids:
- from rosemary,
- Betulinum,
- carnosian,
- Ursolic,
- oleanolic,
- Coffee.
When is it worth using green herb?
In addition to its flavor, green thyme is also valued for its health-promoting properties, including antioxidant, anti-inflammatory, and digestive benefits. The most important medicinal aspect of the plant is its effectiveness in preventing the development of various microorganisms such as yeasts and bacteria, including staphylococci and streptococci. The spice also has a soothing effect on stomach ailments such as flatulence and indigestion. Savory, on the other hand, is an important ingredient with antiseptic properties. Preparations made from this herb can be used to treat minor skin injuries, such as minor burns or insect bites. Savory also helps relieve vomiting and nausea, sore throats, diarrhea, and even cystitis.
The use of green chervil in the kitchen
Chervil has a wide variety of culinary uses. It can be used to season meat, fish, soups, salads, and as an ingredient in marinades and sauces. Its versatility makes it an indispensable ingredient in the kitchen of anyone who appreciates healthy, tasty, and aromatic dishes.
Chubrica is an ideal addition to typical Bulgarian dishes, but its use goes much further, enriching the flavor of many different dishes. For example, it pairs perfectly with thick, dark stews, traditional bigos, cottage cheese, or dishes based on eggs and mayonnaise. It also makes a perfect addition to potato and meat dishes. Its unique flavor is unmistakable when combined with cheese. We can add it to, for example,:
- Shopska salad,
- vegetable casseroles,
- pickled cucumbers and other products,
- Spreads for sandwiches, e.g. vegetables, egg or cottage cheese,
- Pizza,
- baked beans,
- meat stew,
- Lecho.
Chubrica is a good base for culinary experiments and adds a unique character to many traditional and new recipes. When consumed in moderation, the spice is safe and should not have any adverse health effects. However, there are certain situations in which you should exercise caution when using it. People struggling with inflammation of the stomach or intestinal mucosa, as well as those suffering from gastric reflux, should limit their consumption of this spice. Due to the possible salt content in green thyme, people with high blood pressure should also pay attention to the salt content in their diet. In addition, certain ingredients in it can trigger allergies in some people, so caution is advised, especially if you are prone to allergic reactions.
