The history of anise - a spice valued by the ancient Greeks, Chinese, Egyptians and Incas
Star anise is a fruit that "gives birth" to a tree with the graceful name star anise. This evergreen plant belongs to the citron family and can grow up to 12 meters tall. The fruits are shaped like spectacular, eight-pointed stars and are extremely popular in cuisines around the world.
The history of star anise
Star anise has enjoyed a high reputation since biblical times. Sources (in the Gospels of Luke and Mark) indicate that it was such a valuable product that it served as currency in Palestine.
Many famous Greek and Roman writers, including Dioscorides, Theophrastus, Pliny, and Paladus, mentioned the cultivation and use of anise in their works. However, during the Roman Empire, citizens of the empire utilized its properties to prevent indigestion and flatulence.
In the Middle Ages, anise was valued for its health-promoting properties, especially in France. It wasn't until the 17th century that it became appreciated for its fragrances. Since then, star anise has been widely used to flavor various beverages, especially spirits.
Properties of star anise
Star anise has been used for hundreds of years to reduce the effects of overeating. The spice stimulates gastric juice secretion and also has a diastolic effect. It is a proven and effective remedy for indigestion and flatulence.
However, this is not the end of its health-promoting properties. Star anise is an excellent remedy for respiratory ailments, especially coughs. The mucus-forming properties of anise make it an expectorant.
It's worth noting that shikimic acid is derived from star anise. It's a substance that's increasingly used in the care of dry and acne-prone skin.
Culinary possibilities of star anise
In Poland, star anise is especially popular during the holidays as an addition to all kinds of baked goods. It is also often added to meat (both veal, pork, and poultry), vegetables, or alcoholic products (liqueurs, liqueurs, or the winter favorite, mulled wine). It is an excellent ingredient in fruit soups and compotes. Star anise, added to both soups and beverages, enhances their flavor, making it more expressive and deeper. Star anise can also be found in various dairy desserts, fruit salads, or in combination with honey.
