As warm evenings approach, the prospect of spending as much time as possible in the garden becomes more appealing by the day. Or by the river. Or in the park. Or anywhere outdoors. A perfect, several-hour sojourn outdoors involves sitting on a blanket, accompanied by larks, and snacking on Mother Nature's gifts from a wicker basket. And surely nothing promotes a sense of harmony and oneness with nature quite like a vegan diet. Fill your stylish wicker basket with vegan snacks. Vegetables and pastes are a must-have veggie set

Vegan picnic meals don't have to be laborious and complicated. Crunchy vegetables and creamy spreads make a reliable and quick snack. Springy, young carrots and parsley root, kohlrabi, bell peppers, cucumber, or cabbage core cut into sticks are perfect. Try adding halved radishes and cherry tomatoes, too. Various vegetable pastes or classics like hummus can be bought in the store or made at home. If you have a little more time, you can make sunflower paste. While the spread made from canned or jarred pods is quick to prepare, sunflower paste takes at least 30 minutes longer. Why? The beans need to be soaked before being placed in the blender.

How to make simple and quick spring rolls?

The recipe for spring rolls is simple. Prepare your favorite vegetables, rice or soy noodles, fresh herbs (cilantro, chives, mint, basil), some protein like smoked tofu or fried tempeh, soak the rice paper, and... pack it up! You've got a nutritious vegan picnic snack! Add simple yet delicious dips, like sesame sauce with tahini or sriracha mai. Or you can simply throw a bottle of soy sauce in your picnic basket.

Mash the avocado with finely chopped garlic, a little lime juice, and salt with a fork and place directly onto one half of the cake. Spread the next half with the bean paste—mash the canned red beans or fork it like an avocado. Add fresh vegetables like diced bell peppers, pickled jalapeños, baby spinach, and red onions. Roll into tight logs. These tortillas can be cut into smaller pieces or used as wraps.

Couscous is great because it's quick to prepare. Simply pour hot broth or water over the groats and let it stand, covered, until the liquid is absorbed. Then add the finely diced paprika, chopped sun-dried tomatoes, roasted sunflower seeds, and olive oil. Season to taste.

Throw plant-based club sandwiches in the picnic basket

Club sandwiches are the triangular ones, not at all reserved for carnivores. To assemble such a snack, you can use organic toast, although any other, not too fragile bread will work just as well to hold the sandwich in check. Spread one slice with vegan mayonnaise, the other with mustard. In between, layer iceberg lettuce, pickled or smoked tofu, pickles (onion, beet, gherkin—whatever you like). If two layers aren't enough for you, add a third, for example, with nachos. Cut in half and mash with a toothpick.

Dessert idea – fruit skewers

Hop on sticks as much as you can! Carefully scoop out balls from the watermelon and melon with a spoon, fill them with strawberries, apples, bananas... whatever comes to mind. You can also melt some of your favorite chocolate and dip the skewers in it, then refrigerate for a while to let the glaze set.
