Black cardamom is a popular spice used in Szechuan cuisine, among other things. The fire-dried seeds are characterized by a slightly resinous, spicy aroma and a fresh citrus-ginger taste. Unlike green seeds, it also imparts a smoky aftertaste to foods, which comes from the way it's processed. After saffron and vanilla, cardamom is one of the most difficult to obtain and therefore also one of the most expensive spices in the world. These are the seeds of perennial plants in the ginger family that occur naturally in the forests of Sri Lanka and southern India, although the crop is also grown in Tanzania, Guatemala and Vietnam. The seeds can be used whole (slightly crushing the shell), ground, or crushed in a mortar. Organic cardamom is perfect as an ingredient in cooking rice, stews, lentil soups and dry preserves. It is also suitable for flavoring sweet sauces - black cardamom is one of the INGREDIENTS
of the spice garam masala. It's also a great addition to coffee. Due to its high essential oil content, it is traditionally used to freshen breath and also as an ingredient to support normal metabolism. Its ingredients protect against discomfort after a meal and support the function of the immune system.
