Valentine's Day is approaching, and we're not exactly sure what to give a loved one? Dinner would be ideal. Intimate, romantic, and away from the hustle and bustle of crowded movie theaters or shopping malls. Especially if we prepare it ourselves. For all lovers of zero-waste, healthy, and organic food, we have interesting suggestions for delicious vegetarian dishes for Valentine's Day dinner, featuring more or less well-known superfoods .

Hummus with added dried or freeze-dried beetroot

As a snack, we can serve hummus, which tastes great with bread, sliced ​​vegetables (carrots, bell peppers, celery), nachos, crackers, or rice chips. For Valentine's Day, we offer hummus in a particularly beautiful pink color, which is due to freeze-dried or powdered beets. To prepare it, we need:

  • 3 cups cooked chickpeas,
  • 3 tablespoons tahini,
  • about 1 tbsp of Provençal herbs,
  • 3 tablespoons powdered or freeze-dried beetroot,
  • olive oil
  • 2 cloves of garlic,
  • lime juice,
  • Salt and pepper to taste.

Preparing hummus is very simple. After cooking the chickpeas according to the package recipe, mix all the ingredients thoroughly until a perfectly smooth consistency is achieved. Then, transfer them to an elegant bowl and serve with your favorite toppings. In addition to the ingredients mentioned above, hummus also pairs well with croutons, feta cheese, tomatoes, or olives.

Quinoa with aromatic mushrooms and lovage

Quinoa , or Quinoa , is considered one of the most valuable and healthy plants in the world. It's nutritious, easily digestible, and safe for people with gluten intolerance. To prepare a warming and flavorful Valentine's Day dish, we'll need:

 

  • Quinoa,
  • red pepper,
  • fresh ginger,
  • Corn,
  • capers,
  • onion and garlic,
  • Mushrooms: champignons, oyster mushrooms, porcini mushrooms,
  • Italian nuts,
  • Spices: lovage, cumin, rosemary, chili,
  • salt and pepper,
  • clarified butter,
  • Oil.

 

Heat 2 tablespoons of clarified butter in a saucepan, add half a teaspoon of cumin and a glass of thoroughly rinsed quinoa. Toast the ingredients for a while, then add two glasses of water and cook for about 15 minutes. While the quinoa is cooking, heat a tablespoon of clarified butter in a pan, add rosemary, half a teaspoon of lovage, a pinch of chili, grated ginger, strips of bell pepper, diced onion, garlic, button mushrooms, oyster mushrooms and other mushrooms and fry. Once cooked, add the quinoa to a pan with mushrooms, a handful of corn, walnuts, a spoonful of capers, season with salt and pepper, drizzle lightly with olive oil and sprinkle with fresh parsley.

 

As a side dish to the quinoa dish, you can serve a healthy salad with a mix of sprouts and mustard oil dressing. Wash and dry the sunflower and radish sprouts, place them in a bowl, and toss. For the sauce, combine 2 tablespoons of flaxseed oil, 2 tablespoons of apple cider vinegar, 1 tablespoon of honey, and 1 teaspoon of French mustard. Season with salt and, if desired, ground pepper (radish sprouts themselves have a slightly burning flavor). Pour the resulting sauce over the sprouts mixed in a bowl, mix gently, and you're done.

Vegan dessert for Valentine's Day - elegant coffee chia pudding with cashew nut cream

A Valentine's Day gala dinner isn't complete without a delicious dessert. To make it not only delicious but also healthy, we offer coffee pudding made with only natural and nutritious ingredients.

  • 250 ml strong, freshly brewed coffee,
  • 125 ml coconut milk,
  • 4 tablespoons chia seeds,
  • 200 g cashew nuts,
  • Juice of half a lemon,
  • 200 ml water,
  • Maple syrup to taste
  • a teaspoon of vanilla extract,
  • Fruit for decoration - raspberries, blueberries,
  • Cocoa for finely dusting the dessert.

Combine chilled coffee and coconut milk in a bowl, add maple syrup (depending on how sweet you like your desserts, you can use a spoonful or more), and mix. Then add the chia seeds and mix thoroughly until smooth—that is, until the seeds are not compacted. Set aside for about 15 minutes. After this time, mix again, cover, and refrigerate for a few hours, preferably overnight.

For the cashew cream, blend the nuts finely, add a teaspoon of vanilla extract, lemon juice, and half the water. Continue blending, adding the remaining water regularly, until a creamy consistency is achieved. Then add enough maple syrup to make the cream sweet enough for us and blend again until the cream is fluffy.

 

Pour the dessert into cups – first a layer of cream, then chia pudding, lightly dust with cocoa, and sprinkle with fresh fruit. The layered dessert looks beautiful. The quantity of the listed ingredients should be enough for several servings.

 

Finally, when we're preparing all the dishes, let's not forget the decorations and atmospheric accessories. For a romantic Valentine's Day dinner, aromatic essential oils or natural soy candles are certainly suitable.
